A Food Suprise!

Okay...so it's Lent, and I'm Catholic, which means no meat for me on Fridays.  I'm not a huge fan of fish, and you can only have so many tuna sandwiches etc...so of course I went to Pinterest to see what I could find.  BAM...right away I found a Southwestern Tilapia recipe that you could do in the slow cooker...what???? you may be saying to yourself (that is def what my mom said...followed by, "that can't be right, I don't think it is gonna turn out")  I have to admit, I was a bit worried cause it was just a comment from a pinner, and I really couldn't find the actual recipe...but I was desperate, and it looked so good...here is the Pinterest photo...


I did find the recipe for the sweet corn/black bean salsa.  Super easy and fast.  1 can sweet corn drained, 1 can black beans drained,  1 can diced green chile peppers, 1 large red bell pepper diced and sprinkle in some cajun spice.  I used frozen Tilapia fillets and also sprinkled cajun spice on them, spooned the salsa on top, and then sprinkled shredded monterey jack cheese on them.  Wrapped it up in the tinfoil, and then placed in the slow cooker.  I made 7 filets this way, and put them on low for 5 hours.  They were seriously delicious.  Next time (this coming Friday) I will serve over wild rice.  Here is what mine looked like...not too bad.


The 12 year old said he didn't want to try it, but the 17 year old and the hubby loved them!!  Chalk these up to a FAB find!!!
